This fairly recent advisory circular from the FAA has a lot of good information on the flight characteristics of various categories of experimental aircraft, and the skills and training required to fly them safely.

I know pilots who wont fly homebuilt a/c and one off owner design. You really have to know what has been good or bad construction and design.

Build variations can make aircraft behave a lot differently even though essentially the same design. Scale planes can be challenging particularly regarding rudder effectiveness. It is absolutely essential to make sure the weight and balance and rigging are done right If you don't trust the build quality, why go near it? Same for a plane that has been stressed without anyone knowing.( not recorded or inspected). The more carefully you do things the luckier you become..Nev
